"Hi! This is Richard Buccola here in New York City and today on behalf of Expert Village, I am going to show you how to make split pea soup. I am just going to add to our bowl and save it for later. Next we are going to get our garlic and this is a brand new garlic. Just give it a punch at the back of the knife and you see it comes out of its shell and you just break it with your hands. You are going to need about 2 cloves, or 3 small cloves of garlic today. You want to take the garlic out of the shell just again the same way you got it off the rind, just give it a punch, it comes right out. A lot of times you have the stem which is a little tough and hard and make sure you cut that off. Again, just a punch with a knife and it comes right out of its shell. Don't forget to cut off that stem. You want this garlic chopped very fine so you are going to mince it. To do that you are just going to cut one way. Be careful that you don't cut yourself. Turn it, cut the other way. Once you have it there, you see that it is big pieces so it is going to start working the back of the knife, chopping up and down and pushing our garlic in like so and just working it back and forth until you get the desired size. We are looking for very finely chopped here. We want it to be minced."
