"Hello my name is Hiu on behalf of Expert Village, I'm going to show two different recipes of homemade ice cream. The first recipe I'm going to show is a basic vanilla ice cream with almond praline. While we are heating the milk mixture we would beat the egg in another sauce pan. You just use a whisk to kind of beat the egg so that the yolk and the white are completely combined together. The reason to adding the egg into the milk mixture directly would add the milk bit by bit into the egg and the milk mixture are fully combined. As you can do, I add the milk and then whisk it until they are all combined. Then I start to add the rest of the milk. If you do it the other way the egg would be cook instantly and it would not form the custard we want for this recipe. "
