"Hello my name is Hui, on behalf of Expert Village I'm going to show how to make pig feet in Chinese style. To soften up the shiitake mushrooms, we have to soak them in cold water for 1-2 hours then we would pick them up. Remember don't throw away the mushroom water. We would use it later as the liquid for the stew. As you see the dry mushroom have really tough woody stem on them so for this dish, we have to cut them off. The way to cut it off is to just lay the blade of your knife flat parallel to the cutting board and give a quick slide. You can also use a pair of scissors to finish the job. That is what the shiitake mushrooms should look like."
