"My name is Brandon Sarkis on behalf of Expert Village. Today I'm going to show you how to actually make eggnog and stop buying that nasty stuff in the carton at the grocery store. So now, we are going to do what's known as folding of our egg whites into our mixture over here. So we're going to take a rubber spatula and we're going to scoop them all out and drop them right into that milk mixture. So light and fluffy it's really crazy actually to think that these were egg yolks just like five minutes ago, or egg whites rather. So we're going to scrape everything we can out of this bowl, because I didn't do all that work to leave anything behind. There we go, so will take that, we'll actually use our spatula here to help us get it all off the, or use our whisk to help get the stuff off the spatula. When you go to fold stuff, if I were to whip this all together you?re just going to knock all the air out of it. So what we're going to do is just that, we're going to fold the mixture together. What that means is we?re going to use nice, gentle, not harsh means of smoothing everything out. So that is nice stirring motions like this work well. Folding dry product, obviously not a beverage like this, is a little easier to do. There is a couple of ingredients we have to add that you want to save to the very end. One is your vanilla; shake that in there real quick. On the vanilla and the rum both, you want to move pretty quickly with them because even though this is a large amount of mix, if you don't dilute them fairly quickly they will actually curdle, the alcohol will actually curdle the milk in here and that would be bad. So now let's move up here and will take out rum, just a tiny bit at a time, it's only an ounce of rum but you don't want to curdle this whole thing. There's that and I missed a little drop of vanilla there. So here we are, we're just going to stir all the way through, make sure everything is nice and mixed together which I'm pretty sure it is at this point. You?re not looking for a real smooth texture because you?re not going to get it because of all the bubbles that are in here. But you?re looking for a even texture. So we're going to get the sides one last time. All right, there's our eggnog, lets go ahead and get it in a cup, show you how we garnish it up."
