"Hi! My name is Kip and I'm here on behalf of Expert Village. Today we're making a white Christmas cake. The first thing that we're going to do is make sure that we have three 9 1/2 inch pans. This is for the layers of the cake. We want to go ahead and just grease our pans, grease and flour them. I like to use Crisco. I use my hands. When I was growing up, my mom used a paper towel. Then when I got into the bakery business, I found out that bakers use their hands and it's not a big deal to wash your hands once you're done greasing them. This is much easier and much, much faster than using a paper towel and wiping it with the grease and then putting it on there. Just put a nice thin coating on there on all 3 pans. After we've greased our pans, we need to flour them. I'll just dump a little bit of flour in the bottom of it and shake it around until it coats all the surfaces I need to. I usually put a cookie sheet underneath of it, and then the excess I'll just dump into the next pan. Now, our pan has a nice coating of flour, so we're ready to bake. Do it again with the next one and on to the third."
