"I'm Terry and today I'm going to give you tips on smoking a beef brisket. We are almost at the end. It has been smoking for 8 hours you want to get you a thermometer you can buy that at a local discount store again. Just place it inside the meat. We know the outside temperature around the meat cause the lid says around 225. We want to check the inside temperature which would be closer to 150 to 180. It was not quiet a 150 so we know that the 8 hours is not long enough we are going to need we would need to take this brisket another 3 hours. Once it reaches 180 degrees it is really close to being done. So I would put that lid back on there and we would flip it over for this last cooking since we have already flipped it twice just flip it one last time. Since this is the last time we would mop it again. Now let it smoke for another 2 hours at 200-225 degrees. By that time we would check it with our thermometer one last time and it should be right around 180 degrees. When it reaches that point it is ready to take off the grill."
