"So we're ready for our quick and easy homemade dressing we're going to start off with some lemon zest and I have a microplane here and you should be careful with this you don't want to micoplane your knuckles. We're just going to take off about a 1/2 of teaspoon worth of zest I just give it a couple of strokes on each little spot cause you don't want to get down to close to that white part because that part is bitter, it's the rime that has all that good flavor. It's about 1/2 of teaspoon right there and we can use the same lemon cut it in half actually I'm going to massage a little bit first, cause if you give it a little of massage the juice will come out a little easier. These are little tough the lemons I'm going to cut it in half and squeeze out about 1/2 of teaspoon of the juice trying not to squirt your eye or get any seeds in there which I just did. It's about 1/2 of teaspoon then we have some of the dejon mustard and this I didn't open it in advance now I have slippery hands, see if I can get it. Of the dejon mustard you going to have a 1/2 of tablespoon put that in there and then about an 1/8 of a teaspoon I'm going to eyeball it here, of some more of this kosher salt and some fresh ground pepper. I'm going to whisk this together just to incorporate that first ingredients there looking good, there's nothing better than fresh lemon it's such a great flavor, then to make the rest of the dressing I'm going to slowly stream in approximately about 3 tablespoons of this olive oil, so with one hand I will slowly stream it in, and the other whisk it together. This way it all gets incorporated for your dressing you just got to watch it until it gets the right consistency this is probably still a little thick, add some more you can't go wrong with olive oil it's one of the healthiest oils for you and such a great way to dress a salad. Once you get used to this recipe there's no way your going to want to have bottle salad dressing again, a little bit more, that looks good you'll like that. And you've made your own homemade salad dressing and we'll wait and put it on when your about to eat cause you don't want it to start wilting the lettuce or anything and that's it homemade salad dressing."
