"Hi! My name is Denise Bennett and I'm here on behalf of Expert Village. I'm going to start here with something I like to use a lot, ginger. This is what ginger looks like. I like to use this in soups, salads, desserts. You can use it in a juice. It's anti-fungal. I'm leaning towards this one. When you go ahead and test this, as you can see, this one is a little darker. Maybe even a little bit older. I look for a nice color. Make sure it's plump. I'm going to go ahead and peel just the tiniest bit with my fingernail. I want to go ahead and smell it and make sure that that smell is the way ginger should. As it gets older, it's going to get harder and it'll shrink. The water content will disappear. We're looking for water content in our food. This is a very nice piece of ginger. A lot of stores, if this was a large pieces, they'll go ahead and let you take a piece off. In this case, I don't need ginger today, but I'm letting you know what ginger should look like. Don't be afraid. Use this in your recipes. It's nice."
