"When to harvest. When the garlic has six pairs of leaves coming off of each side, when half of them from the bottom up has started to yellow and dry, like this, that is when to harvest it. You don't want it to be totally dry like this. This is for demonstrating purposes. Take your fork, go straight down along side of it, stick down, grab the garlic, pull it up. Of course it is not going to be all white and clean like that, this is a dried one. But it will be clean when you brush it off, it will be a little muddy, it will have three sets of green leaves, three sets of yellow dry leaves and you will want to lay that out. They will get sunburned, don't leave it in direct sunlight for very long, right when it is harvested. Put it in the shade in a cool dry place."
