"Now it's been about 10-15 minutes and our chicken has been in the soup cooking. What I'm going to do is I'm going to check to make sure that it's done. The way that you know that it's done is the best way is to check the temperature. It should be at least 160 degrees. Also, if you feel it and it's tough then it's probably done. This is definitely done here. We're going to go ahead and pull it out and we're going to let it cool. It's okay if some of the tomatoes and stuff are on it. We can just dump those back into the soup. That's not a big deal at all. I got one more chicken in there somewhere. There it is. Before I shred them, I'm going to let them cool. If not, I'll burn my fingers. I'm just going to set these aside and let them cool while we work on the tortilla strips."
