"Our next step in preparing garnishes is to add fresh avocado your soup. This is one of the things that you want to do last right before you server your soup because avocado does oxidize very quickly with the air. This is just a really nice hass avocado. They come from Mexico. If you can't find them in your store you can use guacamole. I know sometimes that you can find guacamole a little bit easier, but nothing beats fresh avocado. Just cut it in half there. All I'm going to do is make some long slices down the length of the avocado. Be really careful. I'm stopping right at the skin. The skin isn't edible. Be careful that you don't put your knife all they way through. I'm going to do diagonal cuts here. Then in my bowl I'm just going to with my spoon scoop out the avocado like so. This is my other garnish for my soup."
