"My first step to making the chicken tortilla soup is going to be to cut some onions. The onions really, really give it such a great flavor. They're going to sauté in the pan, so it's going to give it a nice rich home cooked flavor. I'm going to start by cutting my onions into medium dice. I'm removing the outside skin of the onion because it's not edible at all, and you definitely don't want to get that into your soup. The other thing is I cut off each end of the onion so it's easier to work with. Also, you want to make sure that you keep the root intact because that's what's going to hold your slices together. I'm just going to start making long slices through the length of the onion. I'm going to go parallel to the cutting board, and then I'm going to go one more time vertically to get sliced onion. Slide this on over. We're going to do the same thing with the other half of the onion. Alright, I'm going to go ahead and do one more onion. Again, cut off the very end and the tip. When you cut off the very tip there where the root is, remember to make sure that you don't completely cut the root off because that's going to hold your onion together. We're going to go ahead and remove the skin again. I'm using yellow onions here. If you don't want to use yellow onions or you don't have any on hand, don't worry about it. Just use whatever you have on hand. White work very well as well as red, but I like yellow just because they're a little bit sweeter. Our last one here. These are smaller onions, so if you have one large onion that could probably substitute for these 2 smaller ones that we have."
