The next herb is one that you're probably more familiar with. This is Scallions. In Chinese medicine we refer to it as Cong Bai. This one is great for anytime, we say, we get a cold in those early stages, what we call a wind cold invasion. So we combine this scallion, along with ginger, often times garlic, and a little bit of thyme so we can make a tea out of it that's great for colds and flu. The most important part actually is the part we usually throw away and that's the roots. We actually want this part specifically for making us break a sweat. So if you're trying to make your cold and flu tea, you actually want the white part. And so save that for cooking. It's great for that. And save this part. I actually had my mother on a cruise once, she went and emailed me from her cruise saying she was catching a cold and didn't want to take antibiotics with the ships doctor. So I emailed her back the recipe with Cong Bai, ginger, and particularly the Sung Jai is the best type for that, garlic, and some thyme. She called down into the ships kitchen and asked for that all to be put in hot water. She emailed me the next day and said she was out dancing again and that her cold and flu symptoms were completely gone whilst the people around her continued to get sick who were stuck with the ships doctor taking Tylenol and maybe some antibiotics. So remember to keep some scallions in your kitchen. Not only should you cook with it but you can use it for medicine.
