"I want to give you a few tips today about cucumbers. They are pretty simple vegetables to pick. But a few key tips will help you to pick a better vegetable in the end. This one here has got a nice even dark green texture. They've been waxed so you'll see the shininess. You'll want to wash that off when you get home. But the nice green color from end to end is perfect. This is an English cucumber, so its going to be a little bit lighter, but again you have an even color from end to end. What you don't want to see, is you don't want to see something like this. Now, granted size really doesn't matter in this case. This is not a pickling cucumber, its just a little bit smaller. But, things like that seem to be pretty obvious to me. A little less obvious might be where it dimples in and wrinkles. Its dried up. And really all a cucumber is, is its moisture. So if you don't have that moisture, you don't have the crisp. And you end up getting a bitterness in the end. And lastly I think its really important , again, we've talked about it all ready. Ice. A grocery stores best friend, maybe not yours. If this is stored directly on ice, whether its in your home or in the grocery store, all of these water crystals or water molecules that are in the cucumber are going to freeze. And when they freeze, they are going to thaw back out and they get mushy. So be careful on how the cucumbers are stored. And make sure again, what you want to see is something a little more like this."
