"OK, we're ready to make the knob. Now I just went to my clay and I literally drug my hands through, grabbed a fist full. That's how much I use. And then ball it up, like you always do, throw it down in the middle, center it out. Now I make nice big flat knobs for my baking dishes. So what you want to do is leave a little pad at the bottom, but bring in with one of your fingers on your right hand, using your left hand to stabilize that knob, because once you get a stem you're going to start to get a lot of torque. And you don't want to pull that right off. I'm using my left thumb now to push in to make that stem a little deeper and to pull the knob out simultaneously. Just shape it until it looks the way you want it to look. I personally like it to be really wide. Nice big handle that you can get a grip on. And then you just undercut it and let that set up to leather hard and you can attach it to your casserole."
