"Hi, my name is Lori with Figs Catering in Austin, TX on behalf of Expert Village today we're going to show you how to make an entire Thanksgiving meal. Now we're going to cut the celery for our vegetarian mushroom stuffing. To that I got about 4 stocks and you can choose to leave the leaves or not, I actually like the flavor of the leafs, I'm going to go ahead and leave them on there. I'm just going to slice right down the very center of the celery stock and run my knife through the length of the celery stock. For this particular purpose we're going to about a 1/4" thickness. One of the things you want to be very careful with whenever you're using your knife in cutting celery or really anything. Is that you keep your fingers tips protected by making sure that you keep the part of your finger, has kind of a shield for your knife. Celery is really great in stuffing cause it adds a really nice crunch that you can't really get anywhere else. (don't want the end of that) It can be a little bit bitter. This is what your 4 stocks of celery will look like."
