"Hi my name is Lori with Figs Catering in Austin, Texas on behalf of Expert Village today we are going to show you how to make a entire Thanksgiving meal. The first thing we are going to do to make the marinade for our tofu turkey is to start off with lemon and one of my favorite things about the lemon is the zest of the lemon. It is so good and so flavorful, it actually has all the lemon oil in it but you want to be careful not to get the piff of the lemon zest cause that is the bitter part. But definitely get that lemon zest in there and this a really good marinade for chicken, for turkey, all kinds of things but we are going to use this on our tofu turkey today. So I have the zest of a few lemons going on, other alternative to this could be orange, orange could be really nice, you can even do grapefruit. Now I'm going to cut my lemon in half and we are going to add the lemon juice to the bowl and I'm going to do it up like so, so that we don't get any of the seeds in the marinade. Now that I have the juice and the zest in 2 whole lemons I'm going to go ahead and add some olive oil and I'm going to add double the amount of olive as I have lemon juice. So you can just kind of eyeball it, it does not have be perfect that looks good to me."
