As the cheese kind of cools on your sticks, you want to place them on your plate. You want to just keep on working with them and let those cool. Just go on your way to the next one. The whole thing about this is making the cheese cool. If the cheese is not cool, then it's not going to get lumpy and it's not going to look real. You want to basically do that. You can place them on the edge of your plate like that. You can use your spoon to kind of do another one. That way you can have a bunch of them done and ready to go.
