You crack open the egg, and then you very gently rock it from side to side until the white separates from the yolk. So I'm just gently rocking it from side to side, and kind of tilting it so the white falls right into the bowl, and the yolk stays right in the shell. Let's do one more. We're going to crack it, separate it gently and rock it from side to side right in the shell. And you get all of that good egg white, none of the yolk, and you know you don't have to throw this yolk away. You can use it in other recipes, you can use it in your breakfast or you can use it to make bread or cake, just about anything. That's how to separate an egg."
