"Hi, I'm Jennifer Cail and on behalf of Expert Village, I'm going to show you how to make fun delicious gingerbread men. Our dough has been fully cooled in the refrigerator or freezer and it is time to roll it out. As you can see I've prepared my counter top by rolling out some wax paper and then covering that with flour. If you have a pastry board, a marble pastry board then you can use that as well. But for doing cookies where you're rolling out large amounts of dough, I find it's much easier just to put some wax paper down on the counter top and it gives you a lot more space. If you want even more space or if you have two people working you can keep spreading out with the wax paper as much as you need. So I'm going to take some of our cookie dough, our gingerbread people and get a little bit of flour on there and then use my nice heavy rolling pin. You really want to have a rolling pin with some heft. You don't want something that you're going to have to push really hard in order to roll the dough out. You want to be careful to make sure that it's not sticking to the dough. But at the same time you want to be careful that you're not getting too much flour on the dough because that'll make it dry out and get tough. And obviously I should of used a slightly larger piece of dough there. But this is about what you want; between a quarter of an eighth of an inch."
