"Hi, I'm Jennifer Cail and on behalf of Expert Village I'm going to show you how to make this delicious pecan pie. Our next step is going to be melting the butter, first we want to cut three tablespoons from a stick of butter. The mixture that you use under salted butter otherwise known as sweet cream butter because you don't want to add salt to a recipe if it's not part of the recipe, what the recipe intended. Most recipes call for unsalted butter so that you are not adding additional salt. You want to turn the flame on fairly low you don't want it too high because if the butter melts too fast then you are going to end up with brown butter instead of melted butter. Some people might prefer melting butter in microwave but I find that rather uneven to have half of stick melted and half of it still solid and cold. Then it will explode everywhere and then you'll be cleaning grease and butter out of the microwave for a week. So we are just going to slowly melt the butter, if you use the spoon to stir it while it's melting it will help spread it around a little bit faster. Cause you don't want the butter to start bubbling or to cook."
