"One thing to remember is if you shot a buck and you want to mount the deer you don't want to go further than this point so that a taxidermist can use that cape without using stitches to actually mount it later on. We will just take a gut knife here and split it very similar to a zipper, separating up to that bone. From there we'll try to break through. You can also do it with a knife, as well, continuing to open up the chest cavity. Continue to cut down through the throat so that you can get to the esophagus. Once you've done that you cut the esophagus to use to pull that."
