"There are lots of different varieties of birds that people developed in order to use different traits. One of the things that have been developed over the years is egg color. The shell color is often very interesting. We have here on our farm a variety of chicken that lays these greenish eggs and these have been developed by a local woman from breeding together a chicken from South America that lays blue-green eggs. Now this bird here is a product of that development. He's got these ear muffs. They often have greenish legs, they have a variety of feather coloring but the big issue is that they will lay a greenish egg. Obviously not the rooster but they will lay this green egg shell because people just like it. It has nothing to do with the flavor or taste of the egg but the egg shell is an interesting product and people are fascinated by green or blue eggs. They are cross-bred I should say in order to produce a more consistent egg size and laying ability. "
