"So we’re going to remove the end of the peach and peel it. ok, so we have finished peeling our peaches. So now we’re going to pit them. You want to make sure you get all of the pit out of your peach. You don’t want grandma choking on a piece of pit. Put our fruit in the syrup carefully. We don’t want to splash and burn ourselves. We don’t put too much at one time because we want the syrup to be very hot- boiling. We just want to sterilize the peaches, we don’t want them to cook. If we leave them long, they will be very soft. The very point of doing this work with syrup is so they will keep there firmness. But we want to be thorough with that so that they are completely sterilized. We have to wait for the syrup to get completely back to boiling point. "

on 8/2/2008 i think you do a good job...i enjoyed listening and watching your video... but unsure why you peel the peaches this way... i use boiling water then drop peaches in water for 2-4 minutes depending on how ripe the peaches are until the skins peel off easily.. remove form water and place in cold ice water ... the peel fall off easily... you loose less of the fruit. thanks lynn
