"Our syrup is boiling, our fruit is hopefully quite sterilized. So we transfer it to our canning jar carefully. Don’t make a mess. And we pour enough syrup so that it will be covered. Be careful when you’re working with syrup- it can burn badly. So you want to handle it with exceptional care. And you want to fill it up to the very very top of the canning jar so that you don’t leave any air, or if you leave any air, just very little of it. it will probably over flow a little bit- it’s to be expected. So you close your canning jar. You do not close it tight, and then you can put it one side until you have your jars ready, and then you will put it back in the pressure cooker. "
