"Hi! I'm Terri Turco with Expert Village, and we are going to get started with this fabulous banana bread. It's really, really simple, but there's a couple techniques that I want to show you and some additional spices we're going to add in to really jazz this recipe up. First of all, I'm making a half of recipe. If you want to make 4 loaves instead of 2, just double it. You're Expert Village viewers, you know how to do that. First we're going to start with half a cup of sugar. So far so good, right? Then we're going to add a 1/4 cup of vegetable oil and one extra large egg. If you don't have an extra large egg, you can use 2 large eggs or 3 medium. Really try and stay between the large and extra large. After that it gets a little dicey as far as the measurements. Now, first you're going to take those 3 ingredients. Simple enough, right? Nobody's lost yet. We're just going to mix those together. Make sure that they're really integrated with your fabulous wooden spoon. After these ingredients, these 3, are all mixed together, it's really important because the egg white really wants to coagulate and stay on its own. Just make sure that that’s really beaten in. When we come back, what I'm going to show you is a really fun technique of mashing bananas. The bananas not only to be mashed, but they need to be on the older side. Join me in just a minute. Come on back and we'll show you how to mash some bananas for that fabulous banana bread."
