In participating in a tasting, there are a lot of things that just make a good tasting even better. And I think in the accompany months we discussed a little bit earlier that having 2 or 3 good cheeses, probably nothing that’s really, really strong in smell or particularly in flavor but I always think of a real good ripe brie, there are some good creamy soft wrap and cheeses. Some kind of maybe mild cheddars, these are excellent. Soda crackers or wafers, the French bread, you can never have enough and sometimes in going from one wine to the next, often people will mention that maybe you’re cleansing your pallet, maybe that’s not exactly the correct term but what it actually does is it sort of neutralizes the flavor that you had in the previous wine and it sort of prepares you and makes your mouth ready and neutral for the next wine. "
