"Now that the rice mixture is in the oven, we're going to start on the chicken. So we're going to turn the burner on about halfway, and put in about a tablespoon to two tablespoons of oil. Again, when handling chicken or fish or meat, if you can, try and wear gloves. So we're going to season the chicken, rather liberally, with garlic salt on both sides, as well as black pepper. But most importantly, with chili powder. This is really the signature flavor of this dish. So we're going to want to use at least a tablespoon of chili powder. Rub around the plate to coat. We're going to make sure that the oil rises up the side, and to keep the handle off to the sides. We're going to put the breast in, and we'll saute it about three minutes on each side."
