" Hello this is Chef Sean Roe on behalf of expertvillage.com now that we have our seasoned egg wash and have seasoned flour all ready to go. We are going to accomplish our last step which is to egg wash the fish, flour it and saute in a shallow pan fry. Make sure that our pan is nice and hot and we are going to add our olive oil to that. Then the olive oil is heated through. You want to make sure that you have enough oil to cover the bottom of the pan. I'm going to take a piece of our orange ruffy. We are going to put it in the egg bath. Be very gentle make sure that it does not fall apart on use. Lay in the flour get it nice and covered. Now we add the fish to our oil. It starts sizzling right away on us and we are not going to distribute this to much we are going to let it cook about half way and then we are going to turn it over and let it cook half way and it should be opaque in the middle. It is a wonderful preparation when you are in a hurry and you want to cook fish fast this is probably the fastest method for cooking fish and this is the result that we are looking for. Nice carmelization of the fish, add a little more paprika to give it a little more color. This is cook all the way through nice and opaque, a wonderful texture, and it still has a nice moisture content."
