" Hello this is Chef Sean Roe on behalf of expertvillage.com and when you are picking your fish out in the grocery store there is five things that are very important that you determine before purchasing. There is five indicators of fish that it is either fresh or its spoiled. First being of course the odor. Fish should never smell fishy. It should always smell like fresh salt water or have little or no odor what so ever. Also if you are buying whole fish make sure that the eyes are not sunken. Make sure that they are not opaque. Make sure that they are transparent and look fresh. Also the gills if you are buying whole fish and there skin on make sure that there gills are not waxy or the scales are not falling off the fish that they feel smooth and not flame to the touch. Again if it has a slimy texture that means that bacteria has been growing on that. Also the texture of the fish should be firm. It should not be overly soft or overly tender. Make sure that the gills are pink or red. If they are gray or brown that show that the fish has been improperly stored and improperly handle. So with that being said lets move on to cooking."
