" Hello this is Chef Sean Roe on behalf of expertvillage.com and before we actually start cooking I always like to review the most important part of food preparations which is safety and sanitation. When ever you are working in the kitchen or dealing with fish or any other type of protein it is very important to handle the fish in a very sanitize manner always make sure that your fish is maintain cold below 40 degrees, also make sure you always wash you hands prier after touching the fish and afterwards to prevent cross contamination. Always make sure that you are dealing with your instruments in a safe manner knives make sure that there sharp. Make sure that you are cutting on cutting boards and always make sure that the fish that you are preparing is fresh and from a incredible prevar or a grocery store. Next we will be reviewing how to determine the quality of your fish and make sure that it is fresh and wholesome."
