" Hello this is Chef Sean Roe on behalf of expertvillage.com. Now that we have our eggs ready to go and our pan is hot we are again going to add some of our clarified butter. Just enough. We are going to swirl it around the pan again. Careful not to spill because the butter would start a fire if it touches a burner. Now that our pan is well oiled we are going to add our eggs. Again you should see the coagulating as soon as it hits the pan. In this style of omelet however, we do not agitate, we leave sit. We are using a nonstick pan so we always try to use plastic or rubber utensils. When we see the bottom is sulfides a little bit turn down the heat. Work around the edges again."
