" Hello this is Chef Sean Roe on behalf of expertvillage.com. We just made a omelet traditional French style now we are going to talk about fillings. There are several different fillings that you could use such as mushrooms, such as Canadian bacon, ham, or any pork products, onions. When you are making a filling for a omelet you could either sautee them separately or you could add them fresh into the omelet. I prefer fresh. They would cook through the heat of the omelet so the mushrooms would become tender, and the bacon would become warm and the eggs the onion would stay just a little bit on the crispy side. If you like sautee them first. Cheese is probably the one popular thing to place into a omelet. Cheddar cheese is wonderful. I prefer a muenster or a havarti, always make sure to shred or dice up all of your ingredients so that it is small. If your ingredients are to stiff they would break the omelet. If you want to keep them relatively nice and small. Compression all of your ingredients together before making the omelets. Now we could easily add them in before you fold them over."
