" Hello this is Chef Sean Roe on behalf of expertvillage.com. Now that we are moving on to our side to our next step we have our omelet pan. First thing that you do is you get it hot. Very hot you want to keep it on a pretty high heat. We need to get the pan hot before we can add our oil and in turn add our omelet mixture. Now that our pan is hot we are going to add our clarified butter that we clarified earlier. Just put a little on there. It would start bubbling right away. You just throw it around the entire pan. Get it nice and going. Then we are going to pour our omelet mixture right in. now as soon as your egg hits it should start coagulating around the edges as you see and we are going to adjudicated. Constantly moving it around which is the French method. We do this so it won't stick to the pan. We do this so it would stay loose. The omelet traditionally does not have to have filling. It is a way of preparing eggs. Though in the next step I'm going to show you some common things and common ways of doing that. We are just going to gently fold the omelet over. Taking it off the heat in the French method you keep folding it in until it forms to a football shape. We take the pan, we flip it over, as such."
