" Hello this is Chef Sean Roe on behalf of expertvillage.com. Now that we have our eggs properly mixed there are a few things that we can add to our eggs to make them fluffier and lighter and have a better texture. You really have a choice between cream, water, you really don't want to add both because you don't want to liquidized the eggs to much. You want to add just enough to were the steam from the water or the milk would actually puff the eggs up and the steam would actually helps rise the eggs. This time I'm going to use milk which is a personal preference of mine. Just a little bit of milk. Again do not over mix the eggs just gently fold them in. there we go. Other things that you could add are just a touch of flour. Flour would actually help make him a little more fluffier. The more Florentine or scramble eggs from unless you want it to stay nice and soft or you want to lay as flat as possible for the final presentation."
