" Hello this is Chef Sean Roe on behalf of expertvillage.com And our next step in our production is whipping our eggs. Always use the freshest eggs you can find. As younger eggs will hold up better to the cooking process. A normal omelet is about 2-3 eggs which is roughly about 4-6 ounces of product. A common mistake of making omelets is using a whisk or a blender. We do not want to do this. As you could see the eggs are compressive of the whites and the yoke. The yoke contains albumen which is a protein which holds the egg together when cooked and so you wanted just whip it until it is just mixed. Just to break the yokes. If you over process it your omelet will fall apart. So you just want it right about there. So it is staying together really nice for us. We then just sauce it a little. Using fresh ground pepper. Never over salt or over pepper as you could always season the taste. Now we move on to our next step."
