" Hello this is Chef Sean Roe on behalf of expertvillage.com. Before we get started with our ingredients and cooking I always like to start of with basic sanitation that is one key and most important parts of food preparation. Make sure that you are working on clean surfaces. Make sure that your eggs are pasteurize which is heating process which eliminates bacteria that may have been in the egg prior to its being packaged. Such as salmonella. Make sure that you wash all of your vegetables. Make sure that you keep everything at least below 40 degrees and that you wash your hands frequently when you are working with egg products especially when you are working with raw egg product it is easy to cross contaminate raw egg on your hands to the finished product. It could cause food born illness. Always make sure you clean as you go and keep everything organized so that it stays efficient and sanitary. Now lets get back to the cooking."
