"Hi I'm chef Rainer Wickel and I'm here today with ExpertVillage.com. Well now we've cooked our sauerkraut. We've gotten our ingredients together. We cooked the sauerkraut and we've cooked the bacon in the onions. Now we need to get it ready to put everything together into our casserole. Now one step that we need to do is the very first thing. We need to make a flour paste which we are going to put in there. That's going to bind the whole thing together. Now what we need to do is we need to take about 2 tablespoons of flour and we're going to put water in there. Basically what we're going to be making here is a paste. So you need to put just enough water in there so that we can make a nice paste. If you need to add a little bit more water to get going right, go ahead and do it. But just go ahead and mix that together. Now we have a nice paste put together here. What we're going to do next is we're going to take our sauerkraut and we're going to put it in our casserole dish. Now if you notice we still have a quite a bit liquid in here. That's good. You want to make sure that we don't cook this all the way down because we still want a little bit wine in here. And remember, we're going to be baking this so all that liquid is eventually going to cook off. Now that we have it in there, go ahead and spread the sauerkraut. Now we're going to take our paste and we'll take a spoon and put it into the mixture. Go ahead and spread it all around the top. And this is going to bind the sauerkraut together. Get all of that in there. Go ahead and take your spoon and mix it nicely through there. That sauerkraut's just right. Remember we want it to be nice and soft. We don't want it crispy. Now we're going to take our onion and our bacon mixture and go ahead and put that over the top. And once again spread it out there because we want it to have that nice and even through there. Take your spoon again and just stir it all the way through. That looks good. This is how we blend all our ingredients in our casserole to get it ready for baking. "
