"Hi I'm chef Rainer Wickel and I'm here today with ExpertVillage.com. Well now we've cooked our sauerkraut in our wine and we gotten that all set. Now we need to move on to the next step. That's cooking the onion and the bacon together. Now for this step, what we need to do is we need to take onions and bacon and we're going to fry them together. Then we're going to drain the fat off of the bacon and onion mixture. And we're going to mix that up with our sauerkraut to put it into the casserole. So to start out with, we're going to take a half of onion and what you want to do is you just want to dice that onion up. So just go ahead and slice it. You want to slice these very thin and be careful. You don't want to cut your finger. We're going to dice it into little pieces. And this is going to give the casserole a nice flavor. Now we still have a couple of big pieces and make sure that you dice them up a little bit smaller. Because you want these pieces to be fairly small. There we go. Go ahead and put those to the side. The very next thing we need to do is we need to fry the bacon up. Now I precut the bacon here into 1" strips. Go go ahead and take the bacon and put it into the frying pan. We're going to turn that up to about medium high heat. Just go ahead and spread it around. We want this bacon to be a nice golden brown, not to be fried too much but just a nice golden brown before we put the onions up. Cause the onions are going to cook up a lot faster than the bacon is. Okay now the bacon is nice golden brown. It's just a little brown around the edges so now we're going to put the onions in. Now grab your onions and put that into the bacon and just go ahead and stir that together. Now we want to fry this until the onions are actually a nice golden brown. This is how we cook our onions in our bacon to get ready to put in our sauerkraut casserole."
