"Hi! I'm Chef Rainer Wickel and I am here today with expertvillage.com. Well we are on to our third recipe and that third recipe is a Sauerkraut Casserole. Now any German cooking lesson has got to have a Sauerkraut recipe with it because it is probable one of the most traditional German recipes. Now Sauerkraut you are going to get pretty much with any type of meal. It goes really good with meat. It is just a really good addition to any type of dish and Sauerkraut is available all over Germany. It is probably one of the most traditional dishes there are. Now Sauerkraut basically is fermented cabbage. You get that from the name. It's Sauerkraut; kraut is cabbage and sauer is sour cabbage and all it is is fermented cabbage. Many different cultures have the same type of thing but you know German Sauerkraut has its own unique taste. Now you will find any restaurant is going to have Sauerkraut. It actually goes with practically any type of German dish. It is a traditional side dish for practically anything. Now as far as the history of Sauerkraut goes, you know Sauerkraut there is no real time when it was actually developed because it has been in German cooking forever. It probably dates back to prehistoric time. All it is fermented cabbage and the way that Sauerkraut is made is it is actually fermented in its own juices and the juices are actually what picked the Sauerkraut and that is what gives it that unique taste. The recipe that I am going to be sharing with you today is my mom's personal recipe and believe me when we've had guests over or friends, they always wanted her to make this because this is absolutely delicious. The reason is because it is not really that sour. It takes quite a it of the sour taste out of it. It is made with bacon and apples and then it is baked and it is absolutely delicious. So this is our next step and let's go ahead and make a Sauerkraut casserole. "
