"Hi, I'm chef Rainer Wickel and I'm here today with expertvillage.com. Well, we're on to our next step and that's peeling the potatoes. Now when we peel the potatoes you want to have a couple of things. You're going to need your potato peeler and a nice sharp paring knife and a bowl to put the peelings into. Now, I like to wash the potatoes before I start this out and I've already washed this potato and now we're just going to start peeling. Now you want to make sure to grab the potato and you're going to be peeling away from yourself. Now be really careful because, you know, you're dealing with sharp instruments right here and you want to make sure that you don't cut yourself because if you get blood in your potato pancakes that's gonna spoil them. Now you want to peel away from you and you want to peel it into the bowl. And as you can see these things go flying off pretty quickly. You want to make sure they don't go flying all over the place. A lot of times, you know, you can just go over a garbage can or over the sink and just peel this out because this does get pretty messy, and just go ahead and give it nice even strokes. You want to get all the skin off of it. Now if you notice on the potato sometimes there's a little green underneath which is also part of the skin. You want to make sure that you get that off too. So go ahead and take it all off. Now every once in a while you're gonna come up with a little eye like this and you want to get that out of there. So go ahead and take your paring knife for that and you just want to cut all around it. Now be careful, because once again you have a nice sharp knife here. This doesn't have to be exact because it's not really brain surgery. But, just make sure to go deep enough so that you get that whole eye out of there. Now this is kind of the tedious part of making potato pancakes. You know, if you have an assistant this is probably something that you want your assistant to do for you. And once again, take a look, if there are any dark spots on there you want to take that out because we just want the regular potato, that's all we want to use for it. And now that you're done, go ahead and double check it, get every little last piece off. And, we got about five more potatoes to go but this is how we peel our potatoes to get ready to make potato pancakes."
