"Hi this Rich Buccola here in New York City and today on behalf of Expert Village I am going to show you how to make Veal Marsala. Alright I am back. Look how beautiful this is. My camera girl today came here hungry and she knows she is never supposed to come here hungry. So at this point we have our flame down a little bit it is cooked down. We are going to use about a half of a cup to three quarters of a cup of Marsala. Marsala actually comes from the outskirts of a town called Marsala in Italy and it comes in dry or very sweet. You want to use sweet. The sweet is actually also used in a desert wine. I like to eye ball this. I am going to go about three quarters of a cup, like so and what you are going to do once you get that in there you are going to put your heat up a little higher and we are going to get this down to where it reduces. So we are just going to cook this in the Marsala Wine and make it cook down and we are getting closer. I know when Gracie starts growling it is almost time for lunch."
