"Hi, this is Rich Buccola here in New York City and today on behalf of Expert Village I'm going to show you how to make stuffed shrimp. Alright so we're back. I just want to show you how to butterfly them, you see I'm starting to butterfly these shrimp and get them nice and flat. It's a real simple technique; you just want to start at the top of the shrimp with your paring knife and just start to cut in the center very slowly, very carefully. As you make your incision you'll see that the shrimp will start to open like so and what you're going to do is just keep following that cut nice and easy. What you want to do is just open it up a little bit, take the butt end of your chopping knife and just give it a little pound. Not too hard, just to flatten it out a little and you'll see that's a nice little open. I like to take this little vein out if you see it here, I just get in there and I just pull it right out. I don't like to see that. It looks, it doesn't look nice. Now just put them on a plate then like so. Here, let me do one more for you. Again, here's the shrimp. Same way I cut them in the center, you'll see it even has the line where the vein is. Follow that line with your paring knife at the top. Just give it a little incision; you don't have to cut it all the way through right away. Come straight down to your tail and then you could start to open it up a little bit, see, with your hand. And then again just give it a little cut like so, and if you look, you'll start to open it up like that and what you're going to do is just give it a little pounding with your butt end of your knife and that's it, that's a butterflied shrimp. When I come back, we're going to start our stuffing for it. And we're putting it all together and it's going to be awesome. Get ready to open a bottle of nice Pinot Grigio maybe. I don't know, let's see. When I come back it's stuffed shrimp here on Expert Village."
