"Hi, this is Rich Buccola here in New York City, and today on behalf of Expert Village I'm going to show you how to make stuffed shrimp. Alright, our first thing I'm going to just talk about this. I talked about it on some of the other clips where I use shrimp as my main ingredient. Today shrimp is going to be your main ingredient and you're going to need to buy big, jumbo, beautiful, fresh shrimp. Go to your fresh, you know, your seafood market. I try to refrain from buying in the supermarkets, because it's just the quality is different. I mean, you're not going to get something that looks amazing like this. The most important thing though about buying shrimp is the smell. Smell it, it should have no smell. If it smells fishy it is, you know, let the light bulb go off it's going to be fishy, it's not good. You don't want it to be slimy, you don't want it, you want to be able to push your finger in and not see the dent of your finger. If you see the dent of your finger, it's no good. It should have a nice rounded back, and it should be translucent. If it has little black speckles on it, it's probably past it's time. Remember though, most important thing is smell. Smell and feel to see if it's slimy. Go out and get yourself some fresh shrimp, and I'm going to show you how to stuff 'em great and get everybody real excited cause we're going to eat, here on Expert Village. Stuffed shrimp."
