"Hi! This is Rich Buccola of New York City and today on behalf of Expert Village, I'm going to show you how to make coconut shrimp with orange marmalade dipping sauce. Alright, we're back. First and foremost, go out and get yourself some fresh shrimp. I can't stress how important it is. I don't know where you live, but I'm here in New York City and I can literally go right down to my fish market right up the block. I'd love to actually get the cameras in there and just show you how cool it is there. Maybe that will be another video. I'm going to reiterate on buying shrimp because it's very important. They should translucent. They should be firm to the touch. They should have this bend in them, this nice bend. If you pull it apart, they should always go back to that bend. If you stick your fingers and squeeze your finger into it, it should go back. If you see an indentation in your finger, it's no good. Get rid of it. Don't buy it. If you see little black dots on it, don't buy it. It has past its prime. Most important folks, smell it. It shouldn't smell like anything. A hint of the shrimp of course, but if it smells fishy and it's slimy, don't buy it. It's bad shrimp. My shrimp here down the block literally probably came in this morning. If you can get fresh shrimp, you have to. If you have to go to your supermarket, be careful. Look for the warning signs in buying fresh shrimp. Come back. We're going to show you ingredients. "
