"Hi I'm chef Rainer Wickel and I'm here today with Expert Village.com well we've sliced our potatoes and we've diced our onions and now we're ready to combine everything and fry our mixture. So the very first thing you need to do is go ahead and grab your olive oil and what your going to do is your going to put enough olive oil in there to cover the whole bottom of the pan. And you now there's not to little that you can put in here because remember we're actually going to be draining this before we mix it up with the eggs. So now that we got the oil in there go ahead and turn the heat up to about medium and what I like to do right here we need to make sure the oil is hot enough before we put the onions and the potatoes in there. So what I like to do is I like to take 1 piece of onion and go ahead and put it into the oil. Now you can see the onion is starting to bubble in there so we know that the onion is hot enough so now were going ahead and take our mixture and the very first thing we're going to do is we're going to put the onions in there. Go ahead and grab your knife and put your onions in there. Now remember we diced these up nice and fine and these are actually going to cook down, so the very first thing you want to do is go ahead and separate all the onions and get them started frying. And just spread them nicely out bottom of the pan and now that we have them spread out, then we want to put the potatoes in there. And once again take your knife and throw the potatoes in, now go ahead and spread that out mix it up all really well make sure that those slices are nice and apart. And remember the reason why we cut the potatoes so thin is because we want to make sure that they cook quickly. If you come along and make them to thick it's going to take much to long for them to cook and then the onion are going to get a little bit to burnt to and now what we're going to do is fry these now until the potatoes are thoroughly cooked, until they are a little brown and the onions are nice and brown too. And this is how we prepare our onions and potatoes and fry them to make our tortillas de patatas."
