"Hi! I'm Chef Rainer Wicker and I am here today with expertvillage.com. Well we are on to our next step in making our Tequila Lime Shrimp skewers and we have them marinating now for about 4 hours. Now when you actually marinate the shrimp, you marinate them over night or you can marinate them for as little as 1 hour. Actually the longer that you marinate them, the more that flavor is actually going to get into the shrimp. But my personal preference is about 4 hours and that is just right. So now what we need to do, is we need to put them onto the skewers to get ready to put them on the grill and what we need to do is we need to soak the bamboo skewers for about half and hour in water. The reason that we do this is you want the water to actually seep into the skewers themselves so that all that moisture is in there. There's really two reasons for this. One that it is going to be a lot easier to put the shrimp onto the skewer and two, when we grill them all of that water is going to evaporate out of the skewers and it is going to prevent the shrimp from actually sticking to it. So let's go ahead and put the shrimp on the skewers. What I like to do is I actually like to put it through the tail and the head. The reason that we do that is that way it actually sticks on to the skewer a lot better and you don't have a chance of it flipping around. So just go ahead and put it in and what we are going to do is I am going to put about 7 shrimps on every skewer and you can already smell that nice Tequila Lime flavor. These are going to be really good. So we want to do this so that it lays nice and flat. Otherwise if you come along and put it through just one end, they can flip all around the place and it is not going to be that easy to cook. So put it through the tail and through the head and as you can see it is nice and flat right now. So now we are ready to start grilling them and this is how we put our shrimp on the skewers to get ready to throw them on the grill. "
