"Hi, I'm chef Rainer Wickel and I'm here on behalf of expertvillage.com. Well we finished seasoning our fillets and now what we need to do is we need to grow them. Now remember we put salt and pepper on this for seasoning and we also put a little bit of extra virgin olive oil. And we cooked them that is actually going to set them to the meat and it is going to give it that really good flavor. Now the key with fillet mignon is you want to make sure you don't over cook them. They are really, if you really want to serve them the way that they are suppose to and the way they are going to taste the best is when they are still nice and pink inside. Now you know some people don't like medium cooked meat and you can go ahead and cook these like medium well or well done it is just not going to taste as good if you had them in medium. But once again this is one of the best cuts of meats no matter what it is really going to taste good. So with heat said that is actually the way that I prefer to eat them and that is usually the way that they are served. So we cut the grill on about medium heat right now we don't want it up too high because we don't want it to cook that quickly. So go ahead and grab your fillets and put them on the grill. Now the best thing to do with these is try to keep them a little bit away from the flame. If you see the flames are coming up too high on it go ahead and put them a little bit towards the sides and remember you don't want to cook these too long. You just want to cook them maybe about three minutes on each side. You can cook them a little bit longer if you want to, if you wanted them a little bit more well done. But my personal preference is I like it pretty pink inside because that actually gives it the best flavor. Now we just need to let these cook, we are going to flip them after about four minutes but this is how we grill our fillet mignon. "
