"Hi! I'm Chef Rainer Wickel and I'm here today with expertvillage.com. Well we've got our base all prepared. We've fried the onions in butter. We already put the tomato paste in there, and the oregano, and the garlic and it is all fried together and mixed together well, and so our base is ready. So the very next thing we need to do now is, of course, put in the red wine. Now we are actually going to be using quite a bit of wine for this, because it is a red wine sauce. We are going to be using about 2 1/2 cups. As you can see, all the tomato paste, and the garlic, and the onions, it's all cooked together. It's cooked together really fine. So go ahead and take your measuring cup, and we are going to put 2 1/2 cups in here. Now go ahead and mix all that together. When we are going to do this actual step, it is going to take about 10 minutes. Because what we want to do, is we want to actually cook this all together, and cook it until it is cooked down to about half way. But go ahead and take your whisk, and we want to mix that all together. So take your whisk and make sure to thoroughly mix the wine with the mixture. Now we don't want this to boil a lot. It's just got to barely bubble. So you just want to barely get it in, we just want it to simmer. You don't have to cover this, because remember, we are going to reducing this. That usually takes about 10 minutes. Just make sure to mix it well together. So once you have mixed all well and nice together, go ahead and keep an eye on it. Just let it simmer for about 10 minutes. Every once in awhile go back to it and whisk it together just to make sure that it is blended really well. This is how we add our red wine to our mixture to make our Red Wine Sauce for Filet Mingons. "
