"Hi, I'm Chef Rainer Wickel and I'm here today with Expert Village.com. Well, we're on to our next step. Now we need to get ready to make our sauce. Now the very first thing that we need to do is we need to fry up the onions because that is essentially going to make up the base of our sauce. Now we really don't have to, we can dice these up but remember, we're going to be straining all the onions and the garlic and all the mixture through a strainer so that we just get the liquids out of there. So there's no real reason that we need to actually dice it up really small so what we're going to do is we're just going to slice it into thin slices, so just go ahead and grab your knife and just slice up the onion. We still want to make it in thin slices just because of the fact that we are going to be frying this in butter. So we want to make sure that the onion is cooked really well. And the important thing right here is remember, you're dealing with sharp knives, so you don't want to cut yourself. And, slice that through, and we're good. OK, we 're done with slicing the onions now. Now what we need to do is, we're going to put about two tablespoons of butter into the pan, and that's what we're going to use to fry it. Now usually when you get a stick of butter it's marked off as to how many tablespoons there are. But, for our purposes we're only going to use about two tablespoons so go ahead and cut it off and put into the pan. And what we want to do is we want to head it up to about medium high. When we fry these onions we don't want them to get really dark all we really want to do is we want to fry them until they're a nice golden brown, just so that it releases that aroma. OK, now you can see that the butter's already started to bubble so we're ready, so go ahead and grab your spatula and just make sure that the whole bottom of the pan is nice and covered with the butter. And now we're going to take our onions and we're going to go ahead and put them into the butter. OK, now grab your spatula and what you want to do is you want to start separating it, just separate it so the onion are nice and flat in the frying pan, and now we just need to let that fry. Now, remember you want to have it at about medium or medium high and we basically need to cook these for about five minutes right now, just enough so we get the onions a nice golden brown and so it releases that aroma. And this is how we fry our onions, in butter, to get ready to make our sauce."
